Creamy Lemon Posset

Lemon posset is a citrussy, creamy dessert made with just three ingredients: heavy cream, sugar, and 2 lemons. The acidity of the lemon naturally thickens the cream, creating a smooth, custard-like texture without the need for eggs or gelatin. The prep time is very quick but make sure you set aside a couple hours for the lemony delight to set in the fridge!
Prep time: 6 minutes
Fridge time: 3-6 hours (maybe even overnight)
Total time: 3 hours 15 minutes approx.
Yield: 6 servings
Ingredients:
2/3 cup of sugar
3 tbsp lemon juice
lemon zest of 2 lemons
1 cup of heavy cream (at least 30% fat)

Instructions:
In a sauce pan mix the sugar and heavy cream on medium heat until the sugar is fully dissolved.
Take the pan off heat, add lemon juice and zest and mix. Clean the insides of the lemon to ensure there is no pulp inside, and pour the cream mixture inside the lemon skins.
Put it in the fridge and leave for 3 hours or more. Personally I love to leave it overnight for the most optimal thick and creamy texture.
