This Vanilla Chia Seed Pudding is a creamy, protein-rich treat with a delicious chocolate shell on top. The chia seeds soak up the Fairlife protein drink, creating a thick and smooth texture, lightly sweetened with a pinch of stevia. The melted sugar-free dark chocolate chips harden into a crisp layer, adding the perfect crunch to every bite!

Yield: 2 servings
Ingredients:
3 tbsp chia seeds
½ cup Fairlife protein drink (any flavor) this recipe uses the vanilla one
1 pinch stevia
⅓ cup sugar-free dark chocolate chips (for magic shell topping)
Toppings (optional: I used walnuts, unsweetened coconut, and kosher salt)
Instructions:
In a bowl or jar, mix chia seeds, Fairlife protein drink, and a pinch of stevia. Stir well.
Let sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 2 hours or overnight until thickened.
Melt the sugar-free chocolate chips in the microwave in 15-second intervals, stirring in between, until smooth.
Pour the melted chocolate over the chilled chia pudding and spread evenly.
Let the chocolate harden for a few minutes until it forms a magic shell.
Crack the shell with a spoon and enjoy!
