Yield: 3 servings
Ingredients
1/4 cup of granulated sugar
2 tbsp powdered sugar
1tsp vanilla extract
200g almonds

Instructions:
Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a pan over medium heat, combine the granulated sugar, water, and vanilla extract. Stir until the sugar melts and begins to bubble slightly.
Add in the almonds and stir to coat them fully in the syrup. Cook for 2-3 minutes until glossy.
Spread the almonds evenly on the prepared baking sheet. Bake for 10 minutes, stir halfway, and bake for another 8–10 minutes or until golden brown and fragrant.
While warm, toss the almonds with powdered sugar and a pinch of salt in a bowl. Spread them back on the parchment to cool completely. Enjoy!

How to Store
Room Temperature: Store in an airtight container for up to 1 week in a cool, dry place.
Refrigeration: For extra crunch, keep them in the fridge in a sealed jar or container. They’ll last 10–14 days.
Freezing: Not ideal, as freezing can cause the sugar coating to become tacky when thawed.
Serving Tip
For the best texture and flavor, let the almonds sit at room temperature for 10–15 minutes before serving. If you want to refresh the crunch, pop them in the oven at 300°F (150°C) for 5 minutes, then let cool.
