Chocolate Pecan Coconut Protein muffins

Packed with rich cocoa, crunchy pecans, and a hint of tropical coconut, these muffins are ideal for post-workout snacks or a healthy breakfast option. They're moist, flavorful, and easy to make, combining sweetness with wholesome ingredients. And most appealing, these muffins have a great protein content! *(please note that these muffins taste better without the protein powder so if you don't care, you don't need to add the protein powder)*


Prep time: 5 minutes

Bake time: 20 minutes approx.

Total time: 25 minutes


Ingredients:

  • 1 cup of flour

  • 2 scoops of protein powder (optional: chocolate flavored)

  • 1 tsp baking powder

  • 1 egg

  • 4 squares of Lindt dark chocolate (melted)

  • 1/4 cup milk

  • 1 tbsp vanilla extract

  • 1/2 cup of sugar (can swap this for maple syrup, agave, honey, etc.)

  • 2 tbsp oil

  • 3 tbsp shredded unsweetened coconut

  • 3 tsp pecan

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit

  2. In a bowl combine all ingredients except the pecan and coconut-- and mix.

  3. Either use muffin liners, or spray a silicone muffin liner with oil and fill each muffin not all the way to ensure that it doesn't grow too much in the oven. Crush the pecans and distribute evenly on top of each muffin along with the shredded coconut.

  4. Bake for 20 minutes and leave them for more time if a toothpick does not come out clean.
