Incredible Savoury Turkish Çılbır

Dive into the comforting flavors of Turkey with this traditional dish. Çılbır combines perfectly poached eggs with creamy garlic yogurt, all topped with a rich, buttery paprika sauce. It's a simple yet indulgent recipe that's perfect for breakfast or brunch.

Ingredients:

  • 2 eggs

  • 1/2 cup full fat yogurt

  • 1 tbsp minced garlic

  • 1 tbsp Aleppo pepper

  • 2 tbsp olive oil

  • Pinch of parsley flakes

Instructions:

  1. Poach the eggs by creating a vortex in boiling water and cracking the egg in the middle of the pot while it spins and cooks. Cook it for 2-3 minutes until the yolk is the desired consistency. Normally for Cilbir, the egg yolk is supposed to be runny.

  2. Take the egg out of the water once it is cooked and lay on a paper towel so the extra water could be absorbed. Be careful to not pierce the yolk, and let the egg sit for one minute.

  3. Repeat step 1 and 2 for the second egg.

  4. In a separate bowl mix minced garlic with yogurt and salt together.

  5. On a small skillet mix oil with the aleppo pepper until the spice has dissolved into the oil.

  6. Take a plate and start assembling. Generously lay the garlic yogurt mixture on the plate with the two poached eggs. Drizzle the hot oil and top it off with parsley flakes- or even fresh herbs such as dill. Enjoy!
